I'm working on building a very similar project. Have you found RemoteXY to be helpful in making the UI? I haven't seen much here in terms of being able to store data that would be used to create the graphs.
Have you got the setup to work? What kind of hardware are you using?

I am using nodeMCU and D1 Mini.  Now that they added the ability to write values to display elements such as text boxes, it is very easy to do the screens I have here.

I am using bmp280 for temp, humidity.  I am using relays for fans, lights, dehumidifier
